These were some our delicious eats this week. I have included some links for recipes I used. Everything is really and easy. I hope you'll try some of them. Have fun!
Chicken Marinated in Sweet and Spicy BBQ sauce then grilled on the Barbie; Yukon Gold Mashed Potatoes; Sweet Corn on the Cob and Garden Salad with our Homemade Pickled Golden Beets.
Shepard's Pie (made with ground turkey). No melted cheese on one side to accommodate our picky eater (who shall remain nameless) who doesn't like melted cheese. I based my pie on this simple recipe by Rachel Ray, making my own accommodations: https://www.foodnetwork.com/recipes/rachael-ray/30-minute-shepherds-pie-recipe-1913518
The Shepard's Pie served with Sauteed Spinach, Garlic and Lemon Juice.
Seven Layer Mexican Dip served with Tortilla chips. Jana's own recipe. Layer the following ingredients: Heated refried beans, sauteed ground beef or ground turkey with taco seasoning, diced green chiles, chunky salsa and shredded cheddar. Heat in a 350 degree oven until warm. Remove and top with chopped scallions, chopped black olives, sour cream and homemade guacamole. Serve with restaurant style tortilla chips (the ones from Trader Joes have a touch of lime and salt and are delicious!)
Spaghetti with Leeks, Shallots, Garlic, Cream, Chopped Parsley and Parmesan Cheese. I based my dish on the attached recipe, but as always, made adjustments to make it my own: https://www.foodandwine.com/recipes/creamy-one-pot-spaghetti-leeks
Old Fashioned Vanilla Pudding with Whipped Cream. I bought boxes of Jello Heat and Serve Pudding Mix (not the instant), to keep in my pantry for the quarantine. The kids love it and it's ready in no time.
Homemade Buttermilk waffles with Whipped Cream and Strawberries. I used the following recipe: https://www.simplyrecipes.com/recipes/classic_buttermilk_waffles/
Aunt Jemina works just fine too, but don't use the one that you mix with water. I prefer the Buttermilk or Original that you mix with eggs, milk and melted butter.
Fresh Squeezed Grapefruit and Tangerine Juice with a Sprig of Mint (from our garden).
